Overview:

Performs dish room washing duties, and other cleaning and supply functions, as well as cold and hot food preparation. Under direct supervision, is responsible for making a limited range of decisions, updating the lead worker and escalating to management when necessary

Responsibilities:

What you will do:

Rotates among six dish room positions and cleans, sanitizes and returns all items into service.

Disassembles customer trays from the cafeteria trayveyor.

Places dishes, silverware, trays, etc., into the dishwasher, removes and stocks clean items, and returns them to the cafeteria.

Cleans and sanitizes dish room, dish tables, dishwasher and storage areas daily.

Performs weekly and monthly maintenance on the dish machine and trayveyor system.

Rotates among two different food preparation/server positions.

Requisitions deli meats, cheeses and supplies daily, ensuring proper rotation and storage practices according to Safe Serve standards.

Prepares, pans, and trays cold cuts and cheeses according to all Western & Southern (W&S) standards.

Trays and pans various foods for hot and cold production, following all (W&S) recipes and procedures.

Weighs and measures ingredients for various foods, following (W&S) recipes.

Cleans and processes produce according to (W&S) standards.

Prepares and pans cold food bar, salad bar and toppings according to (W&S) standards.

Assists on the serving lines when needed and performs dish transportation according to (W&S) procedures.

Collects trash and recycling from various cafeteria locations and disposes of them properly.

Cleans, sanitizes and maintains the bulk milk dispenser before and after meals. Rotates milk to ensure freshness and minimize waste.

Sweeps, mops and sanitizes floors through the cafeteria, dish room and storage areas as scheduled.

Assists in transporting food orders from the loading dock to the storeroom, refrigerators and storage areas according to HACCP principles and Safe Serve standards.

Maintains soft drink machines and ice dispensers in the cafeteria. Cleans, sanitizes and services all syrup pumps, CO2 and beverage systems throughout the (W&S) campus.

Rotate among three different afternoon cleaning positions in the kitchen, and completes various cleaning and sanitation tasks according to the sanitation log and (W&S) procedures, following all Safe Serve standards.

Performs heavy cleaning and sanitation of kitchen spaces, equipment, food lines and ventilation system.

Requisitions cleaning and PPE supplies daily through the storeroom.

Completes personal Sanitation Log daily and ensures all tasks are complete, checked and signed.

Provides direction to the part-time utility staff when needed and when lead workers are absent.

Performs other duties as assigned

Qualifications:

High School Diploma (Required)

Proven experience adapting and demonstrating flexibility associated with changes to policies, procedures and processes. (Required)

Demonstrated ability to understand and follow directions.

Proven ability to learn and repeat food preparation steps according to (W&S) recipes and procedures.

Demonstrated ability to perform basic math functions, such as counting, addition and multiplication.

Proven ability to read and write a variety of task lists and meeting notes, and complete Sanitation Log daily.

Demonstrated ability to think strategically and problem solve independently and in a group.

Must provide examples of handling effectively routine situations while maintaining high volumes of work.

Must provide examples that demonstrate dependability and dedication to work processes.

Proven ability to use email and internet browser.

Safe Serve Certified within 180 Days (Required)

Work Setting/Position Demands:

Ability to stand continuously, walk, reach, bend, push, pull, climb, balance, stoop, kneel, crouch, crawl and lift a maximum of 35 lbs. unassisted and up to 50 lbs. assisted.Ability to make substantial repetitive movements (motions) of the wrist, hands, fingers, arms, shoulders, hips and waist.Frequent exposure to noise, dirt, odors, temperature extremes, and potentially hazardous tools and equipment.Extended hours required during peak workloads or special projects.
