Job Description

The main functions of this job are to supervise and direct utility stewards and dishwashers to transport and clean cooking utensils and service ware in order to provide cooks, food attendants and servers with appropriate equipment for guest dining experience. This role also requires the cleaning of the physical surroundings. The supervisor ensures the day-to-day operations of the Stewarding department are conducted in an effective and efficient way.

Approach all encounters with guests and employees in a friendly, service-oriented manner.

Comply at all times with Fairmont standards and regulations to encourage safe and efficient hotel operations.

Supervise and direct team members, including temporary personnel

Must know and assist with all steward duties when needed

Ensure that all dirty china, glasses and silver are returned to dish washing area as soon as possible and perform proper cleaning, and polishing.

Maintain neatness, cleanliness and order of all kitchens, back of the house areas, restaurants, bars, storage areas, employee dining room, compactor room, recycling areas, loading dock, and equipment.

Perform general routine cleaning tasks using standard cleaning products

Clean and dry floors to avoid slip and fall accidents

Ensure all dish machines are clean at all times to adhere to health standards.

Ensure trash/recycling is regularly taken out to the respective areas.

Demonstrate working knowledge of the operational standards

Report any shortages to the leadership team

Keep all areas of the hotel stocked as needed

Work with the Executive Steward to anticipate Banquet equipment needs

Assist in ensuring proper set-up for all banquet functions

Assist in ensuring that all food and equipment on BEOs are delivered on time to all functions.

See that utility stewards maintain the areas in which the functions are taking place.

Assist in the compliance with Health Department standards as well as internal audits such as TEHC.

Assist with Banquet functions

Monitor inventory of all cleaning compounds

Take physical inventories of China, glass, silver, paper and cleaning supplies

Attend meetings as needed

Ensure breaks are assigned/taken properly to ensure compliance of the department.

Assist with training, feedback, and coaching of the team members

Promote positive and engaging work environment for the entire Stewarding department.

Maintain high standards of personal appearance and grooming, which include wearing the proper uniform, and PPE.

Maintain regular and predictable attendance
