CERU, one of London’s leading restaurants specialising in food from the Eastern Mediterranean is seeking to recruit an experienced Restaurant Manager with at least 4 years of relevant experience.

With a passion for travel and new flavours, CERU offers vibrant, healthy, and indulgent dishes originating from the Levant region and has become a leader in its field since the brand started ten years ago.

The restaurant serves sharing dishes in a casual but professional environment and seeks to create a welcoming and memorable dining experience at its South Kensington and Queensway restaurants. CERU is now growing to new locations in Central London and seeks candidates with an ambition for new challenges and attention to guest experience.

About the Role

In this role, you will ensure that your team delivers an excellent customer experience, whilst increasing sales and profitability by managing the day to day running of the restaurant, staff training, and compliance while ensuring the restaurant maintains its high-quality online and offline standards and reputation. Additionally, you will focus on efficient resource management and achieving business growth targets.

Key Responsibilities:

To propose and manage a sales action plan to enhance both the customer experience and to increase overall sales and profitability
To ensure the Company's and statutory regulations regarding hygiene, safety and cleanliness throughout the building are complied with at all times and that staff are trained in the tasks required by them to ensure compliance
Ensure that a high-quality food and drink offering is delivered efficiently, promptly, and effectively, meeting the Company's standards and the customers' satisfaction
To maintain the excellent reputation that the restaurant enjoys “offline” and “online” by methodical implementation of the Company’s service and quality standards
Managing the reservations system so that potential sales opportunities are maximised – training relevant staff to ensure understanding of optimum reservation methods and procedures
Assist in and implement appropriate training in line with personal development plans, ensuring that Legal and Mandatory training and Health and Safety and Food Safety certificates are completed by staff within the timelines set by the Company
Complete a formal Performance Review with all staff close to the end of their initial three-month trial period of employment and follow-ups with a six-monthly review
To report complaints or incidents of theft, fire, accident, loss, damage or other irregularity and take such action as is necessary or practicable
To ensure that Departmental supervisors are operating their budget efficiently and effectively
Ensure labour productivity is in line with budgets and forecast levels of business
Ensure that the Restaurant is running at this maximum profitability, utilising the stock control programme developed by the Company and the "Fixed Costs" profile calculator
Ensure that drink stocks held do not exceed an average of ten day's holding
Ensure that drink stock is appropriately used and in accordance with the Company guidelines
Ensure that Food stock wastage is kept to an absolute minimum by efficient ordering and stock rotation
Ensure that the restaurant’s reputation continues to be excellent and with a growing online and office community of satisfied guests
Required Skills:

Computer literate (including Microsoft Excel)
Financially Aware
Able to provide group trainings
Capable of staff supervision
Communication skills
Leadership and people management skills
Ability to deliver a high-quality experience to customers
A passion for dining out in restaurants
Required Experience:

Minimum of 4 years in a similar role
Level 3 Food Safety certification
