The iconic Arizona Biltmore is located in the heart of the prestigious Biltmore neighborhood in Phoenix. The resort was named the “Jewel of the Desert” since its opening on February 23, 1929. This gorgeous 39-acre property reopened in May 2021 after undergoing a $150 million  and has over 700 rooms, over 200,000 square feet in banquet space, and 8 food and beverage outlets (including 2 restaurants, 2 bars, 2 poolside bars, a gelato shop/café, and in-room dining).

Overview:

As an Assistant Executive Steward, you would be responsible for assisting the Director of Stewarding in managing the hiring, training, and supervision of all stewarding staff. This role ensures banquet and kitchen functions are properly equipped with necessary supplies and that all back-of-house areas comply with health, safety, and sanitation standards. Responsibilities include overseeing inventory management, controlling costs, and addressing equipment maintenance. Additionally, this position plays a key role in mentoring the team, driving operational efficiency, and supporting strategic initiatives to maintain high service standards. This includes, but is not limited to, the following duties:

Supervise, schedule, and direct stewarding staff, including temporary personnel, ensuring team members report to work and all assigned duties are covered.

Coordinate and oversee the setup, breakdown, and timely delivery of food and equipment for all banquet functions, ensuring smooth execution and efficient service.

Monitor and maintain inventory levels of china, glassware, silverware, and other supplies, submitting requisitions for additional items as needed to maintain par stock levels.

Ensure the cleanliness and organization of all storage and back-of-house areas, assigning personnel to rectify deficiencies promptly and conducting routine inspections of equipment and kitchen areas to maintain cleanliness and sanitation.

Implement and oversee compliance with State Health regulations, pest control requirements, and hotel sanitation standards across all stewarding operations.

Respond to requests for additional wares or equipment in a timely and courteous manner, ensuring efficient service for all banquet and kitchen functions.

Manage the collection, cleaning, and return of dirty china, glassware, and silverware, maintaining cleanliness throughout the day and ensuring proper setup for subsequent shifts.

Oversee deep cleaning tasks and equipment maintenance, coordinating with staff to ensure all areas remain functional and clean.

Assist in monitoring and developing team member performance, including hiring recommendations, training, coaching, discipline, performance evaluations, and recognition.

Prepare weekly schedules, approve overtime as needed, and make schedule adjustments based on business needs.

Supervise the delivery of guest service consistent with company core standards and brand attributes, ensuring guest satisfaction at all times.

Maintain inventory control of dinnerware, flatware, glassware, and requisition new or replacement items when necessary, monitoring supply costs without compromising quality.

Ensure all stewarding operations comply with Health, Safety, and Occupational Safety and Health Administration (OSHA) regulations.

Provide ideas and suggestions for improvements in products, services, technology, and processes.

Perform other job-related duties as required by management.

This position manages a team of 55+ to include 4 supervisors and reports directly to the Director of Stewarding.

Qualifications:

Two (2) years prior stewarding leadership experience in a high-volume, fast-paced operation

Prior Stewarding Management experience, preferred

Banquet experience, preferred

Experience in a luxury hotel, preferred

Food Handler Card, required

Proficient in reading, writing, and speaking English to comprehend job requests, caution notices, event orders, and communicate effectively with chefs, managers, and stewarding teams.

In-depth knowledge of sanitation, hygiene, and health department standards to maintain proper hygiene, control waste, and ensure food safety compliance.

Expertise in managing inventory, including counting serviceware, requisitioning, storing, and restocking china, silver, glass, and other equipment to maintain par stock levels. Experience in operating and maintaining kitchen equipment, such as dish machines, to minimize breakage and ensure proper cleaning supply usage.

Ability to coordinate banquet activities, ensuring adequate supplies of small wares and the timely delivery of food between kitchen and banquet teams.

Skilled in controlling theft, waste, and breakage, along with maintaining garbage disposal systems and managing equipment in various temperature ranges.

Proficiency in using computers and Microsoft Office

Developed managerial skills, including the ability to lead, mentor, and motivate a team effectively.

Strong interpersonal skills for managing staff and ensuring guest satisfaction.

Excellent organizational skills to function efficiently under time constraints and meet established deadlines, with strong attention to detail and the ability to multitask in high-pressure situations.

Exceptional customer service abilities and interpersonal skills to communicate effectively with all business contacts.

Strong judgment and decision-making skills, with effective listening abilities and the ability to handle stressful situations during peak operational periods.
