Slows Bar BQ is seeking an experienced butcher to join our team. As Slows' in-house butcher, your primary tasks will be preparing our beef briskets for the smokers and producing grinds for sausage and other applications. The ideal candidate will be skilled at butchery and sausage making.

Responsibilities:

Trim briskets to spec

Prepare and cut various cuts of meat, including beef, pork, and poultry.

Maintain a clean and sanitary, well organized work area.

Follow all food safety and sanitation guidelines.

Receive and inspect meat deliveries to ensure quality.

Manage inventory and ensure proper storage of meats.

Collaborate with the kitchen team to ensure timely and accurate preparation of meats for smoking.

Adhere to all company policies and procedures.

Requirements

Minimum of 2 years of experience as a butcher.

Strong knowledge of meat fabrication

Excellent knife skills and butchery techniques.

Ability to work in a fast-paced kitchen environment.

Strong attention to detail and ability to maintain high-quality standards.

Knowledge of food safety and sanitation regulations.

Ability to work well in a team.

Excellent time management skills.
