Full time job - FOUR days per week (10-12 hours per day) with three days off.

This is not a "Live In" position.

The Mill at Ulverston is a destination, town-centre restaurant and pub. Listed annually in the Good Beer Guide for over a decade and also in the last four years' Good Pub Guide, we offer three bars, a large outside terrace area and a separate restaurant beautifully converted from an old mill house. For diners at the Mill we offer something for everyone - from homemade soup to scallops, haunch of venison to burgers. Both fine and casual dining styles served in relaxed and warm surroundings.

In recent years we have revamped the food offering and upgraded every element. With a modern kitchen and separate prep kitchen containing some of the very latest cooking technology, a good and hardworking team of experienced chefs and a hand selected group of local food suppliers.

Our ambitions remain the same - to be the best local and regional gastro pub .

Our new Head Chef will be responsible for designing and delivering an appealing menu that will offer quality fine dining options alongside more casual dishes. We like to use local meat, fish and veg suppliers wherever possible and showcase these fantastic local ingredients in our food. Excellent food presentation skills, strong staff management abilities and first rate organisational qualities will be essential. With regards kitchen management, the Head Chef will be responsible for periodic stocktakes, achieving reasonable and agreed margins and staff rotas.

This position will report to the Mill's General Manager and Regional Area Managers. Our management team is experienced and supportive, we are always happy to provide further training, support and development if required.

This role would suit an experienced Head Chef seeking a role within a reputable and well managed venue that would offer plenty of scope to develop their own food styles and menus, it would also suit an experienced senior Sous Chef who is looking for their own restaurant to make their mark.

One big advantage of working for Lancaster Brewery is that we want long term employees and we feel it s important for staff not to work unreasonable hours. We don t ever have people working 60/70 hours a week, typically it would be rare for Head Chefs to work many more than 42-46 hours. We know people need a work/life balance and that, in turn, leads to better, happier and more productive employees. Furthermore, this role offers a four day week, with three days off every week.

There would be some flexibility on salary to attract the very best applicants, we want the best local talent available.
