Night Shift Position
Manage airline and home meal replacement production
Station assignments for employees are posted each day.
Proper scheduling for employees to meet productivity targets are completed and followed.
Roll call to ensure employees are in place-adjustments are made as needed.
HACCP monitoring of employees to ensure compliance.
Kitchen ready times are being met.
Production sheets are updated and in place and delivered to the proper employee work stations.
Work daily with the storeroom management to ensure failures are corrected on the food delivery system.
Work daily with the sanitation manager to ensure that failures are corrected on the equipment delivery system.
Develop the needs of the delivery systems for both food/equipment with the appropriate managers to ensure items are identified and times match your production needs.
Ensure proper training of employees and follow up daily with regards of proper structures of workstations.
Plan ahead for meal production counts for each week/day. Create variable production schedules.
Complete menu meeting for menu changes and cycle changes.
Ensure all correct specs are located at each work station.
Ensure that spec checks are completed each day for all menus.
Ensure that gold standards are approved by management for each item produced.
Ensure that overtime is limited and if it occurs that it is recorded properly.
Ensure that daily employee staff meetings are held/documented and filed.
Keep all work areas clean and organized.
Setting up sanitizing sinks and ensure that they are changed according to specifications/requirements.
Keeping log reports up to date for substitutions and informing appropriate management staff.

Must be able to work in cold environment.
Strong communication skills (written and oral).
Consistent follow-through needed.
Ability to meet deadlines.
Must be able to multi-task.
Computer skills (proficient in MS Word, excel, outlook, Kronos WFTK)
Culinary Skills a plus.
Strong Leadership Skills.
High School degree and minimum of 3-5 years of operational experience
Spanish a plus.
